Low-FODMAP Greek Salad Wrap

How can you go wrong with feta cheese, beets, thinly sliced red onion, refreshing cucumbers, and crisp firm lettuce all tossed together in a wrap with a great dressing?

Whenever my mom and I go out to a good Greek restaurant we usually order gyros and get a big Greek salad to “share.” It usually works out that she has a few bites, and I end up eating the rest of the salad. I seem to always find the motivation to clean my plate when it comes to eating Greek food.  You can definitely add some grilled chicken to this salad to round out the meal, but it is great just how it is now!

Yield: One large Greek Wrap

Ingredients

  • Gluten Free Wrap
  • 1 head romaine lettuce, chopped
  • 1 cup sliced roasted beets, cold (see note below)
  • ½ red onion, thinly sliced
  • 3 small cucumbers, sliced into 1” rounds (seedless or seeded)
  • ½ cup feta cheese, crumbled
  • ½ cup Homemade Greek Dressing or favorite store bought Greek dressing
  • Grilled Chicken, optional
