Low FODMAP Chocolate Tahini Fudge Recipe

Ingredients
1/2 cup refined coconut oil (melted)
3/4 cup cocoa powder
3/4 cup tahini paste
1/3 cup pure maple syrup
1 tsp pure vanilla extract
1/8 tsp Himalayan sea salt

Preparation

  1. Mix all the ingredients in a mixing bowl. Pour the mixture into a 9-by-5-inch loaf pan (or pour into mini cupcake molds). Cover with plastic wrap and secure the covering with rubber-band so it doesn’t touch the fudge mixture. Put in the freezer for about 50 to 70 minutes.
  2. Once chilled and firm, take out of the freezer and serve.

More about Stefani of GLUTEN FREE STORIES the photographer for my low FODMAP Chocolate Tahini Fudge:

“Being an IBS sufferer for a couple of years now,  I know just how bad, irritating and annoying it could be. That is why I’m only sharing recipes that I know, are completely Low FODMAP and good for your belly. Being lactose and gluten intolerant, I can completely relate and understand the struggle of having different food intolerances and allergies, for that reason, I try to make recipes that will also be suitable for people with different food intolerances.

“On my IBS journey, through many tryings and errors, I learned a lot. And here I want to share all of that with you, in order to help you with your journey.

“As the saying goes ‘Learn from other people’s mistakes’. I hope you can learn from mine.” Follow Stefani on Instagram and catch her blog here.

“This cookbook is must-have for anyone suffering from IBS or other digestive issues. The recipes are varied and delicious. It is also full of information concerning what food to avoid and gives alternatives which is a really big plus because finding the right foods is difficult and can be overwhelming. This book helps remove a great deal of that stress. It also shows you how to identify the triggers and reintroduce those that are not problematic. I really enjoyed this book and I plan to refer to it often.” Witch-at-Heart, Amazon verified purchase
